Decadent mini cheesecakes with a crispy caramelized top
Ingredients

- 1 cup graham cracker crumbs
- 2 tbsp sugar
- 3 tbsp butter, melted
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 1/4 cup heavy cream
- 4 tbsp brown sugar
Instructions
- First, preheat oven to 325°F.
- Next, mix graham cracker crumbs, 2 tbsp sugar, and melted butter. Press into cupcake liners.
- Meanwhile, beat cream cheese, 1/2 cup sugar, and vanilla. Add eggs one at a time, then mix in heavy cream.
- Divide batter among liners and bake for 20 minutes.
- Chill for 2 hours, then sprinkle brown sugar on top and caramelize with a torch.
Notes
- For extra flavor, add lemon zest to the batter.
- Make sure the cheesecakes are completely chilled before caramelizing the sugar.
