Description

Decadent mini cheesecakes with a crispy caramelized top


Ingredients

  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 3 tbsp butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 cup heavy cream
  • 4 tbsp brown sugar

Instructions

  1. First, preheat oven to 325°F.
  2. Next, mix graham cracker crumbs, 2 tbsp sugar, and melted butter. Press into cupcake liners.
  3. Meanwhile, beat cream cheese, 1/2 cup sugar, and vanilla. Add eggs one at a time, then mix in heavy cream.
  4. Divide batter among liners and bake for 20 minutes.
  5. Chill for 2 hours, then sprinkle brown sugar on top and caramelize with a torch.

Notes

  • For extra flavor, add lemon zest to the batter.
  • Make sure the cheesecakes are completely chilled before caramelizing the sugar.
