- 12 mini tostadas
- 1 cup black beans, rinsed and drained
- 1 cup corn, drained
- 1 bell pepper, diced
- 1 small red onion, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup BBQ sauce
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Arrange the mini tostadas on a baking sheet.
- In a bowl, mix the black beans, corn, bell pepper, red onion, cherry tomatoes, and avocado.
- Add BBQ sauce and mix well until the veggies are coated.
- Season with salt and pepper to taste.
- Spoon the veggie mixture onto each tostada.
- Bake in the oven for about 10 minutes, until heated through.
- Garnish with fresh cilantro before serving.
Notes
- Feel free to add your favorite vegetables.
- These can be served cold as well.
- Adjust the amount of BBQ sauce to your taste preference.
