  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1 bell pepper, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup BBQ sauce
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Arrange the mini tostadas on a baking sheet.
  3. In a bowl, mix the black beans, corn, bell pepper, red onion, cherry tomatoes, and avocado.
  4. Add BBQ sauce and mix well until the veggies are coated.
  5. Season with salt and pepper to taste.
  6. Spoon the veggie mixture onto each tostada.
