  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 package (8 oz) cream cheese
  • 1 cup shredded cheddar cheese
  • 1 package (8 oz) elbow macaroni
  • 2 cups beef broth
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the black beans, corn, diced tomatoes, taco seasoning, and cream cheese to the skillet. Stir until well combined and the cream cheese is melted.
  4. Cook the macaroni according to package instructions, then drain.
  5. In a large mixing bowl, combine the beef mixture with the macaroni and beef broth.
  6. Transfer the mixture to a greased baking dish and top with shredded cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  8. Let it cool slightly before serving.
