- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 package (8 oz) cream cheese
- 1 cup shredded cheddar cheese
- 1 package (8 oz) elbow macaroni
- 2 cups beef broth
- 1 tablespoon taco seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the black beans, corn, diced tomatoes, taco seasoning, and cream cheese to the skillet. Stir until well combined and the cream cheese is melted.
- Cook the macaroni according to package instructions, then drain.
- In a large mixing bowl, combine the beef mixture with the macaroni and beef broth.
- Transfer the mixture to a greased baking dish and top with shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool slightly before serving.

- Feel free to add other vegetables like bell peppers or onions for extra flavor.
