Ingredients

  • 2 cups cooked chicken, shredded
  • 4 corn tortillas
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 tsp chili powder
  • 1 tsp lime juice
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the mayonnaise, sour cream, lime juice, chili powder, and a pinch of salt and pepper.
  2. Add the corn kernels to the mixture and stir in the crumbled cotija cheese and chopped cilantro.
  3. Warm the corn tortillas in a skillet over medium heat until pliable.
  4. Assemble the tacos by placing shredded chicken on each tortilla and topping with the corn mixture.
  5. Serve immediately, garnished with extra cilantro if desired.

Notes

  • For extra flavor, grill the corn before adding it to the mixture.
  • Feel free to substitute grilled chicken with shredded rotisserie chicken for a quicker option.
  • Add sliced jalapeños for some heat.
