- 1/2 cup crumbled cotija cheese
- 1 tsp chili powder

- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a bowl, mix the mayonnaise, sour cream, lime juice, chili powder, and a pinch of salt and pepper.
- Add the corn kernels to the mixture and stir in the crumbled cotija cheese and chopped cilantro.
- Warm the corn tortillas in a skillet over medium heat until pliable.
- Assemble the tacos by placing shredded chicken on each tortilla and topping with the corn mixture.
- Serve immediately, garnished with extra cilantro if desired.

- For extra flavor, grill the corn before adding it to the mixture.
- Feel free to substitute grilled chicken with shredded rotisserie chicken for a quicker option.
