Ingredients

- 4 cups of sweet corn (fresh or frozen)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup of cherry tomatoes, halved
- 1/4 cup of fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the corn, red bell pepper, green bell pepper, red onion, cherry tomatoes, and cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the corn salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve cold as a side dish or light meal.
Notes
