Description
These Mediterranean Steak Bowls are a delicious and healthy meal option. Tender grilled flank steak is served over a bed of quinoa and topped with fresh vegetables, olives, and feta cheese.
Ingredients
1 lb flank steak
1/4 cup olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
2 cups cooked quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/4 cup kalamata olives, chopped
1/4 cup crumbled feta cheese
Fresh parsley for garnish
Instructions
In a small bowl, whisk together olive oil, garlic, oregano, thyme, paprika, salt, and pepper. Pour the marinade over the flank steak and let it marinate for at least 30 minutes.
Heat a grill or grill pan over medium-high heat. Grill the steak for about 4-5 minutes per side for medium-rare, or until it reaches your desired level of doneness. Let the steak rest for 5 minutes before slicing.
Divide the cooked quinoa among serving bowls. Top with sliced steak, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
Garnish with fresh parsley and serve immediately.
