These Mediterranean quesadillas are a delicious blend of fresh vegetables, cheese, and Mediterranean flavors, perfect for a quick meal or snack.
Ingredients

- 4 whole wheat tortillas
- 1 cup shredded mozzarella cheese
- 1/2 cup feta cheese, crumbled
- 1 cup spinach leaves
- 1/2 cup roasted red peppers, sliced
- 1/2 cup black olives, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and layer half of the mozzarella cheese, spinach, roasted red peppers, black olives, and feta cheese on one half of the tortilla.
- Sprinkle with oregano, salt, and pepper.
- Fold the tortilla over and cook for about 3-4 minutes until golden brown, then flip and cook the other side until golden brown and the cheese is melted.
- Repeat with the remaining ingredients to make another quesadilla.
- Cut into wedges and serve warm.
Notes
- Feel free to customize with your favorite vegetables.
- Serve with hummus or tzatziki for dipping.
- These quesadillas can be made ahead of time and warmed up before serving.
