Description

These Mediterranean quesadillas are a delicious blend of fresh vegetables, cheese, and Mediterranean flavors, perfect for a quick meal or snack.


Ingredients

  • 4 whole wheat tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup feta cheese, crumbled
  • 1 cup spinach leaves
  • 1/2 cup roasted red peppers, sliced
  • 1/2 cup black olives, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet and layer half of the mozzarella cheese, spinach, roasted red peppers, black olives, and feta cheese on one half of the tortilla.
  3. Sprinkle with oregano, salt, and pepper.
  4. Fold the tortilla over and cook for about 3-4 minutes until golden brown, then flip and cook the other side until golden brown and the cheese is melted.
  5. Repeat with the remaining ingredients to make another quesadilla.
  6. Cut into wedges and serve warm.

Notes

  • Feel free to customize with your favorite vegetables.
  • Serve with hummus or tzatziki for dipping.
  • These quesadillas can be made ahead of time and warmed up before serving.
