- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 1 cup heavy cream
Instructions
- In a large pot, heat a small amount of oil over medium heat.
- Add the onions and garlic, sauté until translucent.
- Add the chicken breast, carrots, celery, thyme, and rosemary; sauté for a few minutes.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and simmer for 20-25 minutes until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the heavy cream and season with salt and pepper.
- Simmer for an additional 5 minutes before serving.
