- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 1/4 cup cold water
- 2 ripe mangoes, pureed
- 1/2 cup granulated sugar
- 3 large eggs
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 1/2 cup heavy cream
- Mint leaves for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, butter, powdered sugar, and salt until crumbly.
- Add egg yolk and cold water, mix until dough forms.
- Press the dough into a tart pan and prick the bottom with a fork.
- Bake for 15-20 minutes or until golden brown.
- In another bowl, whisk together mango puree, sugar, eggs, lime juice, and lime zest until smooth.
- Pour the mango mixture into the baked tart shell.
- Bake for another 20-25 minutes until the filling is set.
- Let the tart cool, then refrigerate for at least 2 hours.
- Before serving, whip the heavy cream and top the tart with it and mint leaves.

- Ensure the mangoes are ripe for the best flavor.
- This tart can be made a day in advance.
- Store leftovers in the refrigerator for up to 3 days.
