  • 3 large eggs
  • 1/2 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/2 cup heavy cream
  • Mint leaves for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, butter, powdered sugar, and salt until crumbly.
  3. Add egg yolk and cold water, mix until dough forms.
  4. Press the dough into a tart pan and prick the bottom with a fork.
  5. Bake for 15-20 minutes or until golden brown.
  6. In another bowl, whisk together mango puree, sugar, eggs, lime juice, and lime zest until smooth.
  7. Pour the mango mixture into the baked tart shell.
  8. Bake for another 20-25 minutes until the filling is set.
  9. Let the tart cool, then refrigerate for at least 2 hours.
  10. Before serving, whip the heavy cream and top the tart with it and mint leaves.
