- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup crushed graham crackers
- 1/2 cup fresh raspberries, mashed
- 1/4 cup white chocolate, melted
- 1/4 cup shredded coconut (optional)
Instructions
- In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in the crushed graham crackers and mashed raspberries until well combined.
- Roll the mixture into small balls, about 1 inch in diameter.
- Dip each ball in melted white chocolate, then roll in shredded coconut if desired.
- Place the cheesecake balls on a parchment-lined tray and refrigerate for at least 30 minutes to set.
