- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/3 cup sour cream
- 1/3 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup strong brewed coffee, cooled
- 2 tablespoons cocoa powder
- 1/4 cup powdered sugar
- 1/2 cup mascarpone cheese
- 1/2 cup heavy cream, whipped
Instructions
- Preheat oven to 325°F. Mix graham cracker crumbs and melted butter, press into bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, 1/3 cup heavy cream, and vanilla. Pour over crust.
- Bake for 30 minutes, then turn off oven and let cheesecake sit for 5 more minutes. Remove and cool completely.
- Combine coffee and cocoa powder, brush over the top of the cheesecake. Chill in the fridge for at least 4 hours.
- Whisk powdered sugar into mascarpone. Gently fold in whipped cream. Spread over the chilled cheesecake and refrigerate for another 2 hours.
Notes
- For a stronger coffee flavor, add coffee extract to the cheesecake mixture.
- You can dust cocoa powder or grated chocolate on top for decoration.
