Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the lemon zest and lemon juice until well combined.
- Gradually add the flour and salt, mixing until just combined.
- Using a tablespoon, scoop the dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden. The centers should remain soft.
- Remove from the oven and let the cookies cool for a few minutes before transferring them to a wire rack.
- Once cooled, dust the cookies with powdered sugar.
