Ingredients
4 cod fillets
1/2 cup unsalted butter
4 cloves garlic, minced
2 tablespoons lemon juice
1 teaspoon lemon zest
Salt and pepper to taste
1 lb Brussels sprouts, halved
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes
1/4 cup grated Parmesan cheese
Instructions
Preheat the oven to 400°F (200°C).
In a small saucepan, melt the butter over low heat. Add the minced garlic, lemon juice, lemon zest, salt, and pepper. Stir well and set aside.
Place the cod fillets on a baking sheet lined with parchment paper. Brush the lemon garlic butter mixture over the fillets.
Bake the cod in the preheated oven for 12-15 minutes or until cooked through.
In a bowl, toss the halved Brussels sprouts with olive oil, garlic powder, red pepper flakes, salt, and pepper.
