  • 1/2 cup rolled oats
  • 1/3 cup fresh lemon juice
  • 1/2 cup granulated sugar (for filling)
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix together flour, butter, sugar, and salt until crumbly.
  3. Add rolled oats and mix well.
  4. Press half of the mixture into the bottom of the prepared pan to form a crust.
  5. In another bowl, whisk together lemon juice, sugar, eggs, lemon zest, and baking powder.
  6. Pour the lemon mixture over the crust in the pan.
  7. Crumble the remaining oat mixture over the top of the lemon filling.
  8. Bake for 25-30 minutes or until the top is golden brown.
  9. Let cool completely before cutting into bars.
  10. Dust with powdered sugar if desired before serving.

Notes

  • For an extra zesty flavor, add more lemon zest to the filling.
  • Store bars in an airtight container in the refrigerator for up to a week.
