- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- 1/3 cup fresh lemon juice
- 1/2 cup granulated sugar (for filling)
- 2 large eggs
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, mix together flour, butter, sugar, and salt until crumbly.
- Add rolled oats and mix well.
- Press half of the mixture into the bottom of the prepared pan to form a crust.
- In another bowl, whisk together lemon juice, sugar, eggs, lemon zest, and baking powder.
- Pour the lemon mixture over the crust in the pan.
- Crumble the remaining oat mixture over the top of the lemon filling.
- Bake for 25-30 minutes or until the top is golden brown.
- Let cool completely before cutting into bars.
- Dust with powdered sugar if desired before serving.
Notes
- For an extra zesty flavor, add more lemon zest to the filling.
- Store bars in an airtight container in the refrigerator for up to a week.
