Instructions

  1. First, preheat oven to 350°F.
  2. In a bowl, mix coconut, butter, sugar, egg, vanilla, lemon zest, flour, baking powder, and salt until dough forms.
  3. Roll dough into balls, place on baking sheet, and press thumb in center to make an indentation.
  4. Bake for 12 minutes.
  5. Meanwhile, beat cream cheese, powdered sugar, and lemon juice until smooth.
  6. Fill cookie centers with cream cheese mixture.
  7. Bake for 5 more minutes.
