- 4 oz cream cheese
- 1/4 cup powdered sugar
- 1 tablespoon lemon juice
Instructions
- First, preheat oven to 350°F.
- In a bowl, mix coconut, butter, sugar, egg, vanilla, lemon zest, flour, baking powder, and salt until dough forms.
- Roll dough into balls, place on baking sheet, and press thumb in center to make an indentation.
- Bake for 12 minutes.
- Meanwhile, beat cream cheese, powdered sugar, and lemon juice until smooth.
- Fill cookie centers with cream cheese mixture.
- Bake for 5 more minutes.
- Cool and enjoy!
Notes
- You can add a sprinkle of coconut on top before baking for extra crunch.
- For a tangier flavor, add more lemon zest to the dough.
