Description

A creamy and spicy soup inspired by the flavors of jalapeno poppers, perfect for those who love a bit of heat.

Ingredients

Scale
  • 4 slices of bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup diced jalapenos (fresh or pickled)
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pot.
  2. Add the chopped onion to the pot and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the softened cream cheese, stirring until completely melted and smooth.
  6. Stir in the shredded cheddar cheese and diced jalapenos.
  7. Season with smoked paprika, salt, and pepper. Simmer for 10-15 minutes, allowing the flavors to meld.
  8. Serve hot, garnished with crispy bacon and chopped green onions.

Notes

  • For extra heat, use more jalapenos or opt for fresh ones.
  • Can be made ahead and reheated, but stir well before serving.
  • For a vegetarian version, omit bacon and use vegetable broth.
