Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the dough into three equal parts.
  7. In one part, mix in the chopped pistachios; in another part, mix in the chopped cherries; and in the last part, mix in the cocoa powder and chocolate chips.
  8. Using a spoon, drop rounded tablespoons of each dough onto a baking sheet lined with parchment paper, alternating colors.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow cookies to cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
