Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the ricotta cheese, egg, and vanilla extract; mix until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 15-18 minutes or until the edges are lightly golden.
- Let the cookies cool on a wire rack.
- For the frosting, mix together the powdered sugar, milk, and almond extract until smooth.
- Drizzle the frosting over the cooled cookies and let it set before serving.
Notes
- Store cookies in an airtight container for up to a week.
- These cookies can be frozen for up to three months.
- Feel free to add sprinkles or colored sugar on top of the frosting for a festive touch.
