Ingredients

- 8 oz. rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and let it cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, black olives, mozzarella cheese, and basil.
- In a separate bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
- Feel free to add other vegetables like bell peppers or spinach.
- This salad can be made a day in advance; just add the dressing before serving.
