- 8 oz pappardelle pasta
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup black olives, sliced
- 1/4 cup capers
- 1/2 cup white wine
- 1/4 cup vegetable broth
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add bell peppers, zucchini, cherry tomatoes, sun-dried tomatoes, olives, and capers. Cook until vegetables are tender.
- Pour in white wine and vegetable broth. Simmer until slightly reduced.
- Add cooked pasta to the skillet and toss to combine. Season with salt and pepper.
- Garnish with fresh basil before serving.

- You can add a sprinkle of red pepper flakes for a spicy kick.
