  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup capers
  • 1/2 cup white wine
  • 1/4 cup vegetable broth
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add bell peppers, zucchini, cherry tomatoes, sun-dried tomatoes, olives, and capers. Cook until vegetables are tender.
  4. Pour in white wine and vegetable broth. Simmer until slightly reduced.
  5. Add cooked pasta to the skillet and toss to combine. Season with salt and pepper.
