- 1 cup voodoo sauce

Instructions
- Start by peeling the potatoes and cutting them into fries.
- Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
- Heat the oil in a deep fryer or large pot to 350°F (175°C).
- Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes.
- Remove fries from the oil and drain on paper towels. Season with salt.
- While fries are still hot, drizzle with voodoo sauce and top with shredded cheese.
- Return the loaded fries to the fryer for a minute to melt the cheese.
- Garnish with chopped green onions before serving.
