- 2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup rolled oats for topping
- 1/4 cup brown sugar for topping
- 1 teaspoon ground cinnamon for topping
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mix together the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
- In another bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped nuts.
- Pour the batter into the prepared loaf pan.
- In a small bowl, mix together the oats, brown sugar, and cinnamon for the streusel topping. Sprinkle evenly over the batter.
- Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Make sure to squeeze excess moisture from the grated zucchini before adding it to the batter.
- This bread can be stored in an airtight container for up to 3 days or frozen for longer storage.
- For a healthier version, substitute half of the all-purpose flour with whole wheat flour.
