Description

This irresistible bakery-style zucchini bread is moist, flavorful, and topped with a delightful cinnamon streusel that adds a sweet crunch to every slice.


Ingredients

  • 2 cups grated zucchini
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup rolled oats for topping
  • 1/4 cup brown sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix together the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped nuts.
  5. Pour the batter into the prepared loaf pan.
  6. In a small bowl, mix together the oats, brown sugar, and cinnamon for the streusel topping. Sprinkle evenly over the batter.
  7. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Make sure to squeeze excess moisture from the grated zucchini before adding it to the batter.
  • This bread can be stored in an airtight container for up to 3 days or frozen for longer storage.
  • For a healthier version, substitute half of the all-purpose flour with whole wheat flour.
