A decadent, creamy no-bake cheesecake infused with toffee caramel flavors.
Ingredients

- 200g digestive biscuits
- 100g melted butter
- 500g cream cheese
- 100g icing sugar
- 300ml double cream
- 2 tsp vanilla extract
- 200g toffee sauce
- 100g caramel candies
- Sea salt, to taste
Instructions
- Crush the digestive biscuits and mix with the melted butter.
- Press this mixture into the base of a springform pan and chill in the fridge for 1 hour.
- In a large bowl, beat together the cream cheese and icing sugar.
- Whip the double cream to soft peaks, then fold into the cream cheese mixture along with the vanilla extract and half of the toffee sauce.
- Pour the mixture over the biscuit base, then chill for at least 6 hours, or overnight.
- Before serving, drizzle with the remaining toffee sauce, sprinkle with sea salt and decorate with caramel candies.
Notes
- Ensure all ingredients are at room temperature before beginning.
- Replace digestive biscuits with graham crackers if preferred.
- Store in the fridge for up to 3 days.
