Ingredients
1 pound dried pasta
1/2 cup good olive oil
2 cups cherry tomatoes, halved
1 cup chopped fresh mozzarella
1 cup freshly grated Parmesan cheese
1/2 cup julienned fresh basil leaves
1/4 cup freshly squeezed lemon juice
Kosher salt and freshly ground black pepper to taste
Instructions
Cook the pasta according to the package instructions. Drain and transfer to a large serving bowl.
While the pasta is still warm, add the olive oil, cherry tomatoes, mozzarella, Parmesan, basil, and lemon juice. Toss well to combine.
Season with salt and pepper to taste.
Serve warm or at room temperature.
