Creamy coconut custard pie that magically forms its own crust while baking
Ingredients

- 1/4 cup (60g) butter, softened
- 4 large eggs
- 1/2 cup (65g) all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 3/4 cups (430ml) milk
- 1 cup (200g) white sugar
- 1 teaspoon vanilla extract
- 1 cup (75g) shredded coconut
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch pie dish
- In a blender, combine all ingredients except coconut and blend until smooth
- Stir in shredded coconut and pour mixture into the prepared pie dish
- Bake for 30-35 minutes until the pie is set and golden brown on top
- Let it cool before slicing and serving
Notes
- You can add a handful of chopped nuts for extra crunch
- For a tropical twist, sprinkle some toasted coconut on top before serving
