Description

Creamy coconut custard pie that magically forms its own crust while baking


Ingredients

  • 1/4 cup (60g) butter, softened
  • 4 large eggs
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 3/4 cups (430ml) milk
  • 1 cup (200g) white sugar
  • 1 teaspoon vanilla extract
  • 1 cup (75g) shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch pie dish
  2. In a blender, combine all ingredients except coconut and blend until smooth
  3. Stir in shredded coconut and pour mixture into the prepared pie dish
  4. Bake for 30-35 minutes until the pie is set and golden brown on top
  5. Let it cool before slicing and serving

Notes

  • You can add a handful of chopped nuts for extra crunch
  • For a tropical twist, sprinkle some toasted coconut on top before serving
