Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 avocado, diced
  • 1 cup cooked rice
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, mix honey, lime juice, salt, and pepper.
  2. Marinate the chicken breasts in the honey lime mixture for at least 30 minutes.
  3. In a skillet, heat olive oil over medium heat and cook the marinated chicken until fully cooked, about 6-7 minutes per side.
  4. While the chicken is cooking, combine cooked rice, diced avocado, and chopped cilantro in a separate bowl.
  5. Once the chicken is cooked, let it rest for a few minutes, then slice it.
  6. To assemble, place a layer of avocado rice on a plate, top with sliced chicken, and drizzle with any remaining honey lime sauce.
