- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice
- 1 avocado, diced
- 1 cup cooked rice
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a bowl, mix honey, lime juice, salt, and pepper.
- Marinate the chicken breasts in the honey lime mixture for at least 30 minutes.
- In a skillet, heat olive oil over medium heat and cook the marinated chicken until fully cooked, about 6-7 minutes per side.
- While the chicken is cooking, combine cooked rice, diced avocado, and chopped cilantro in a separate bowl.
- Once the chicken is cooked, let it rest for a few minutes, then slice it.
- To assemble, place a layer of avocado rice on a plate, top with sliced chicken, and drizzle with any remaining honey lime sauce.
Notes
- For extra flavor, grill the chicken instead of pan-frying.
- Feel free to add additional toppings such as diced tomatoes or jalapeños.
- Can be served cold as a salad as well.
