Homemade Reuben Bake

Description

A hearty and delicious homemade Reuben bake, filled with corned beef, sauerkraut, Swiss cheese, and topped with a crispy rye bread crumble.


Ingredients

  • 8 slices of rye bread, cubed
  • 1/2 cup of butter, melted
  • 1 pound of sliced deli corned beef
  • 1 can (14 ounces) of sauerkraut, drained
  • 2 cups of shredded Swiss cheese
  • 1 cup of Thousand Island dressing

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a bowl, mix together the rye bread cubes and melted butter. Set aside.
  3. Layer half of the corned beef in the bottom of a 9×13 inch baking dish. Spread the sauerkraut evenly over the beef, then layer on the Swiss cheese.
  4. Pour the Thousand Island dressing evenly over the layers, then top with the remaining beef.
  5. Top everything with the bread cube mixture.
  6. Bake for 45 minutes in the preheated oven, until hot and bubbly.

Notes

  • You can substitute the canned sauerkraut with fresh if preferred.
  • Feel free to add more cheese if desired.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
