Homemade Pineapple Cream Cheesecake

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup crushed pineapple, drained
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter; press firmly into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the softened cream cheese with sugar and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the crushed pineapple and sour cream until well combined.
  6. Pour the cream cheese mixture over the prepared crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set and the edges are lightly golden.
  8. Remove from oven and let cool at room temperature, then refrigerate for at least 4 hours before serving.

Notes

  • For a more pronounced pineapple flavor, add pineapple slices on top before serving.
  • Make sure to drain the crushed pineapple well to avoid excess moisture in the cheesecake.
  • This cheesecake can be made a day in advance for better flavor and texture.
