- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 3 (8 oz) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup crushed pineapple, drained
- 1 cup sour cream
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs and melted butter; press firmly into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the softened cream cheese with sugar and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in the crushed pineapple and sour cream until well combined.
- Pour the cream cheese mixture over the prepared crust in the springform pan.
- Bake for 50-60 minutes or until the center is set and the edges are lightly golden.
- Remove from oven and let cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
- For a more pronounced pineapple flavor, add pineapple slices on top before serving.
- Make sure to drain the crushed pineapple well to avoid excess moisture in the cheesecake.
- This cheesecake can be made a day in advance for better flavor and texture.
