- 1 lb ground turkey or chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) tomato sauce
- 2 cups low-sodium chicken broth
- 1 packet taco seasoning
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and bell peppers, sauté until softened.
- Add ground turkey or chicken, cooking until browned.
- Stir in taco seasoning, black beans, corn, diced tomatoes, tomato sauce, and chicken broth.
- Bring to a simmer and cook for 15 minutes, stirring occasionally.
- Reduce heat and stir in cream cheese until melted and well combined.
- Stir in shredded cheddar cheese until melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with your favorite toppings such as avocado, cilantro, or sour cream.
Notes
- This soup can be made in a slow cooker; just combine all ingredients (except cream cheese and cheddar) and cook on low for 6-8 hours.
- For a vegetarian option, substitute meat with additional beans or lentils.
- Store leftovers in an airtight container in the fridge for up to 3 days.
