Ingredients

  • 1 lb ground turkey or chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) tomato sauce
  • 2 cups low-sodium chicken broth
  • 1 packet taco seasoning
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and bell peppers, sauté until softened.
  2. Add ground turkey or chicken, cooking until browned.
  3. Stir in taco seasoning, black beans, corn, diced tomatoes, tomato sauce, and chicken broth.
  4. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  5. Reduce heat and stir in cream cheese until melted and well combined.
  6. Stir in shredded cheddar cheese until melted.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with your favorite toppings such as avocado, cilantro, or sour cream.

Notes

  • This soup can be made in a slow cooker; just combine all ingredients (except cream cheese and cheddar) and cook on low for 6-8 hours.
