Deliciously sweet and buttery peach bars perfect for summer gatherings.
Ingredients

- 2 cups fresh peaches, peeled and sliced
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a bowl, combine flour, oats, brown sugar, and salt.
- Add melted butter and mix until crumbly.
- Press half of the mixture into the bottom of the prepared baking dish.
- In another bowl, mix peaches with granulated sugar, lemon juice, and vanilla extract.
- Spread the peach mixture over the crust.
- Sprinkle the remaining crumb mixture on top of the peaches.
- Bake for 30-35 minutes or until the top is golden brown.
- Let cool before cutting into bars and serving.
Notes
- For a vegan option, substitute butter with coconut oil or vegan butter.
- These bars can be served warm or cold.
- Store leftovers in an airtight container in the refrigerator.
