Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped

  • 4 cups chicken broth
  • 2 cups water
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1 cup frozen peas
  • 1 package (9 ounces) refrigerated tortellini
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sausage and cook until browned, breaking it up with a spoon.
  3. Add the onion and garlic, and sauté until the onion is translucent.
  4. Pour in the chicken broth, water, diced tomatoes, and Italian seasoning. Bring to a boil.
  5. Add the frozen peas and tortellini. Reduce heat and simmer for about 5-7 minutes or until the tortellini is cooked.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
