- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 teaspoon Italian seasoning
- 1 cup frozen peas
- 1 package (9 ounces) refrigerated tortellini
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the sausage and cook until browned, breaking it up with a spoon.
- Add the onion and garlic, and sauté until the onion is translucent.
- Pour in the chicken broth, water, diced tomatoes, and Italian seasoning. Bring to a boil.
- Add the frozen peas and tortellini. Reduce heat and simmer for about 5-7 minutes or until the tortellini is cooked.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- Feel free to add other vegetables like spinach or carrots for extra nutrition.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a vegetarian version, substitute the sausage with a plant-based alternative.
