- 12 oz rotini pasta
- 1 cup diced salami
- 1 cup diced provolone cheese
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumbers
- 1/2 cup sliced black olives
- 1/2 cup diced red onion
- 1/2 cup Italian dressing
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente, then drain and rinse under cold water.
- In a large mixing bowl, combine the cooked pasta, salami, provolone cheese, cherry tomatoes, cucumbers, black olives, and red onion.
- Pour the Italian dressing over the salad and toss to coat evenly.
- Add chopped parsley, salt, and pepper, then mix well.
- Refrigerate for at least 30 minutes before serving to let the flavors meld.
Notes
- This salad can be made a day ahead of time for better flavor.
- Feel free to add other vegetables like bell peppers or artichokes.
