A delicious and hearty Italian grinder pasta salad loaded with fresh vegetables, salami, cheese, and a zesty dressing.


Ingredients

  • 12 oz rotini pasta
  • 1 cup diced salami
  • 1 cup diced provolone cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumbers
  • 1/2 cup sliced black olives
  • 1/2 cup diced red onion
  • 1/2 cup Italian dressing
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente, then drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooked pasta, salami, provolone cheese, cherry tomatoes, cucumbers, black olives, and red onion.
  3. Pour the Italian dressing over the salad and toss to coat evenly.
  4. Add chopped parsley, salt, and pepper, then mix well.
  5. Refrigerate for at least 30 minutes before serving to let the flavors meld.
