Ingredients
8 oz whole wheat spaghetti
2 tablespoons olive oil
3 cloves garlic, minced
1 pint cherry tomatoes, halved
1 medium zucchini, spiralized
1/4 teaspoon red pepper flakes
Salt and pepper to taste
Fresh basil leaves for garnish
Grated Parmesan cheese for serving
Instructions
Cook the whole wheat spaghetti according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Add cherry tomatoes to the skillet and cook for 5-7 minutes until they start to soften and release their juices.
Stir in the spiralized zucchini, red pepper flakes, salt, and pepper. Cook for an additional 2-3 minutes until the zucchini is tender but still slightly crisp.
Add the cooked spaghetti to the skillet and toss everything together until well combined.
Remove from heat and garnish with fresh basil leaves.
Serve the healthy tomato zucchini pasta hot, topped with grated Parmesan cheese.
