These Healthy Peanut Butter Easter Eggs are a delicious and nutritious treat, perfect for celebrating the holiday. Made with natural ingredients, they are easy to prepare and satisfy your sweet tooth without the guilt.
Ingredients
1 cup natural peanut butter
1/4 cup honey or maple syrup
1/2 cup rolled oats
1/4 cup coconut flour
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 cup dark chocolate chips
1 tablespoon coconut oil
Instructions
In a mixing bowl, combine the peanut butter, honey (or maple syrup), rolled oats, coconut flour, vanilla extract, and salt. Mix until well combined.
Using your hands, shape the mixture into egg shapes, about 1-2 inches long. Place them on a parchment-lined baking sheet.
Freeze the peanut butter eggs for about 30 minutes, or until firm.
While the eggs are freezing, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
Remove the peanut butter eggs from the freezer. Dip each egg into the melted chocolate, ensuring they are fully coated. Return them to the parchment-lined baking sheet.
Once all eggs are coated, place them back in the freezer for another 15 minutes to set the chocolate.
Store the healthy peanut butter eggs in an airtight container in the refrigerator.
