- 2 cups egg whites
- 1 cup spinach, chopped
- 1/2 cup bell peppers, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup cherry tomatoes, halved
- 1/4 cup cooked quinoa
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F.
- In a bowl, whisk egg whites with salt and pepper.
- Stir in spinach, bell peppers, feta, tomatoes, and quinoa.
- Grease a muffin tin and pour in the egg mixture.
- Bake for 25-30 minutes until bites are set.
