Ingredients
1 lb boneless, skinless chicken breasts, cut into strips
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried thyme
Salt and pepper to taste
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 cup cherry tomatoes
2 cups spinach leaves
1/4 cup chicken broth
1 tablespoon lemon juice
Instructions
In a large skillet, heat olive oil over medium-high heat.
Season chicken strips with garlic powder, paprika, thyme, salt, and pepper.
Add seasoned chicken to the skillet and cook until browned, about 5-7 minutes.
Add bell peppers, zucchini, and cherry tomatoes to the skillet. Cook for another 5 minutes, stirring occasionally.
Pour in chicken broth and lemon juice. Add spinach leaves and cook until the spinach wilts.
Adjust seasoning with salt and pepper if needed.
Serve the chicken and vegetable skillet hot.
