- 2 medium zucchini, cut into strips
- 1 cup breadcrumbs (or almond flour for a low-carb option)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Dip each zucchini strip into the beaten eggs, then coat with the breadcrumb mixture.
- Place the coated zucchini fries in a single layer in the air fryer basket.
- Spray the fries lightly with cooking spray.
- Air fry for 10-12 minutes, flipping halfway through, until crispy and golden brown.
- Remove from the air fryer and serve immediately.

- For a vegan option, substitute eggs with a flaxseed mixture.
