Ingredients
1 lb ground turkey
1 tbsp olive oil
1/2 cup onion, diced
2 cloves garlic, minced
1/2 tsp paprika
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp red pepper flakes
1 large sweet potato, peeled and cubed
1 red bell pepper, diced
1 can (14.5 oz) diced tomatoes, drained
Salt and pepper to taste
Fresh parsley for garnish
Instructions
In a large skillet, heat olive oil over medium heat.
Add ground turkey and cook until browned, breaking it apart with a spoon.
Add onion and garlic, sauté until fragrant.
Stir in paprika, oregano, basil, and red pepper flakes.
Add sweet potato, red bell pepper, and diced tomatoes. Mix well.
Cover and simmer until sweet potatoes are tender, about 15-20 minutes.
Season with salt and pepper to taste.
Garnish with fresh parsley before serving.
