Description

A flavorful Grilled Shrimp Bowl with Avocado, Corn Salsa & Creamy Garlic Sauce that is healthy and easy to make. Perfect for lunch or dinner.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 avocado, sliced
  • 2 cups corn kernels
  • 1 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 cup mayonnaise
  • 1 lime, juiced
  • Salt and pepper to taste
  • 2 cups cooked white rice

Instructions

  1. Preheat the grill to medium heat. Season the shrimp with salt and pepper.
  2. Grill the shrimp for 2-3 minutes on each side, until pink and opaque. Set aside.
  3. In a bowl, combine corn, onion, and tomatoes to make the salsa. Season with salt, pepper, and half of the lime juice.
  4. In a separate bowl, mix together mayonnaise, garlic, and the remaining lime juice to create the creamy garlic sauce.
  5. To assemble, divide the cooked rice between four bowls. Top each bowl with grilled shrimp, avocado slices, and corn salsa.
  6. Drizzle the creamy garlic sauce over top. Serve immediately.

  • This recipe can be made ahead and stored in the refrigerator for up to 2 days.
  • You can substitute the shrimp with chicken or tofu for a different variation.
  • Add more or less garlic to the sauce depending on your preference.
