A flavorful Grilled Shrimp Bowl with Avocado, Corn Salsa & Creamy Garlic Sauce that is healthy and easy to make. Perfect for lunch or dinner.

- 1 lb large shrimp, peeled and deveined
- 1 avocado, sliced
- 2 cups corn kernels
- 1 red onion, diced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 cup mayonnaise
- 1 lime, juiced
- Salt and pepper to taste
- 2 cups cooked white rice
Instructions
- Preheat the grill to medium heat. Season the shrimp with salt and pepper.
- Grill the shrimp for 2-3 minutes on each side, until pink and opaque. Set aside.
- In a bowl, combine corn, onion, and tomatoes to make the salsa. Season with salt, pepper, and half of the lime juice.
- In a separate bowl, mix together mayonnaise, garlic, and the remaining lime juice to create the creamy garlic sauce.
- To assemble, divide the cooked rice between four bowls. Top each bowl with grilled shrimp, avocado slices, and corn salsa.
- Drizzle the creamy garlic sauce over top. Serve immediately.
Notes
- This recipe can be made ahead and stored in the refrigerator for up to 2 days.
- You can substitute the shrimp with chicken or tofu for a different variation.
- Add more or less garlic to the sauce depending on your preference.
