1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
2 cups cooked white rice
1 avocado, sliced
1 cup corn kernels
1/2 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
2 tablespoons fresh cilantro, chopped
1/4 cup sour cream
2 cloves garlic, minced
1 tablespoon lemon juice
Salt and pepper to taste


Instructions

In a bowl, toss the shrimp with olive oil, paprika, garlic powder, salt, and pepper. Let marinate for 15 minutes.
Preheat the grill to medium-high heat. Grill the shrimp for 2-3 minutes per side or until cooked through. Remove from heat.
In a separate bowl, combine the corn, cherry tomatoes, red onion, and cilantro to make the salsa.
In a small bowl, whisk together the sour cream, minced garlic, lemon juice, salt, and pepper to make the creamy garlic sauce.
To assemble the bowls, divide the cooked rice among serving bowls. Top with grilled shrimp, avocado slices, corn salsa, and drizzle with creamy garlic sauce.
