- 2 ripe nectarines, halved and pitted
- 8 ounces burrata cheese
- 4 ounces prosciutto, thinly sliced
- 4 cups arugula
- 2 tablespoons olive oil

- Fresh basil leaves, for garnish
Instructions
- Preheat the grill to medium-high heat.
- Brush the cut sides of the nectarines with olive oil.
- Place the nectarines cut side down on the grill and grill for 3-4 minutes until grill marks appear.
- Remove the nectarines from the grill and let them cool slightly.
- In a large serving bowl, combine the arugula, grilled nectarines, and prosciutto.
- Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
- Gently toss to combine.
- Top with burrata cheese and garnish with fresh basil leaves before serving.
Notes
- For extra flavor, marinate the nectarines in balsamic vinegar for 15 minutes before grilling.
- Substitute mozzarella cheese if burrata is unavailable.
