- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 teaspoon chili powder
- 1 teaspoon lime juice
- 1/2 cup crumbled Cotija cheese
- Fresh cilantro, chopped (for garnish)
- Salt, to taste
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10-15 minutes, turning occasionally until charred and cooked through.
- In a bowl, mix together mayonnaise, sour cream, chili powder, lime juice, and salt.
- Once the corn is done, remove it from the grill and brush the mayonnaise mixture over each ear of corn.
- Sprinkle with Cotija cheese and garnish with fresh cilantro.
- Serve immediately with extra lime wedges on the side.
Notes
- For a spicier version, add more chili powder or sprinkle with cayenne pepper.
- Use grilled lime halves to squeeze fresh lime juice over the corn before serving.
