Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup seasoned ground beef (or vegetarian substitute)
  • 1/4 cup nacho cheese sauce
  • 1/2 cup cooked rice
  • 1/4 cup diced tomatoes
  • 1/4 cup sour cream
  • Cooking spray or butter for grilling

Instructions

  1. Preheat a skillet over medium heat and lightly grease with cooking spray or butter.
  2. In a bowl, mix together the cheddar cheese, mozzarella cheese, ground beef, nacho cheese sauce, cooked rice, and diced tomatoes.
  3. Place one tortilla on a clean surface and spread the cheese mixture in the center.
  4. Fold the sides of the tortilla in and roll it up tightly to enclose the filling.
  5. Repeat with the second tortilla and the remaining filling.
  6. Place the burritos seam-side down in the hot skillet.
  7. Cook for about 3-4 minutes on each side until golden brown and crispy.
  8. Remove from the skillet and let cool slightly before slicing in half.
  9. Serve with sour cream on the side.
