A hearty and flavorful casserole featuring layers of chicken, green chiles, tortillas, and cheese, baked to perfection.

- 3 cups cooked shredded chicken
- 2 cups green chile enchilada sauce
- 12 corn tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 can (4 oz) diced green chiles
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, green chile enchilada sauce, garlic powder, cumin, salt, and pepper.
- In a 9×13 inch baking dish, spread a thin layer of the chicken mixture on the bottom.
- Layer 4 corn tortillas over the chicken mixture, followed by half of the remaining chicken mixture and half of the cheese.
- Add another layer of tortillas, the remaining chicken mixture, and top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
Notes
- Can be made ahead of time and refrigerated before baking.
- For a spicier version, use hot green chile sauce.
- Serve with a side of guacamole or salsa for added flavor.
