Description

A hearty and flavorful casserole featuring layers of chicken, green chiles, tortillas, and cheese, baked to perfection.


Ingredients

  • 3 cups cooked shredded chicken
  • 2 cups green chile enchilada sauce
  • 12 corn tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can (4 oz) diced green chiles
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, green chile enchilada sauce, garlic powder, cumin, salt, and pepper.
  3. In a 9×13 inch baking dish, spread a thin layer of the chicken mixture on the bottom.
  4. Layer 4 corn tortillas over the chicken mixture, followed by half of the remaining chicken mixture and half of the cheese.
  5. Add another layer of tortillas, the remaining chicken mixture, and top with the remaining cheese.
  6. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden brown.
  7. Let it cool for a few minutes before serving.

Notes

  • Can be made ahead of time and refrigerated before baking.
  • For a spicier version, use hot green chile sauce.
  • Serve with a side of guacamole or salsa for added flavor.
