Description

Greek Tomato Fritters are a delicious and crispy appetizer made with fresh tomatoes, herbs, and feta cheese. Perfect for a light snack or as part of a meze platter.


Ingredients

2 cups ripe tomatoes, diced
1 small onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large egg, beaten
1/2 cup feta cheese, crumbled
Olive oil, for frying


Instructions

In a large bowl, combine the diced tomatoes, chopped onion, parsley, and mint.
In a separate bowl, whisk together the flour, baking powder, salt, and black pepper.
Add the dry ingredients to the tomato mixture and stir until just combined.
Fold in the beaten egg and crumbled feta cheese until evenly distributed.
Heat olive oil in a large skillet over medium heat.
Scoop spoonfuls of the fritter mixture into the hot oil, flattening them slightly with the back of the spoon.
Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
Remove the fritters from the skillet and place them on paper towels to drain excess oil.
Serve warm with a side of tzatziki or yogurt sauce.
