- Prep Your Bananas:: First things first, peel those bananas and cut them in half crosswise. Then, gently insert a popsicle stick into the cut end of each half. This is where I always try to be super gentle to avoid splitting the banana, which I’ve done more times than I care to admit! Arrange them on a parchment-lined baking sheet. This sheet is going into the freezer, so make sure it fits! Pop them in there for at least 2-3 hours, or until they’re solid as a rock. This step is critical for awesome Ghost Banana Pops.
- Melt the Chocolate:: While your bananas are chilling, it’s time to get that ghostly coating ready. In a microwave-safe bowl, combine your white chocolate chips and that tiny bit of coconut oil, if you’re using it. Microwave in 30-second intervals, stirring well after each, until it’s smooth and creamy. Be super careful not to overheat it, or it’ll get clumpy and sad – I learned that the hard way, ending up with a seized-up mess that looked like cottage cheese.
