Delicious mini chicken meatloaves with a garlic parmesan flavor
Ingredients

- 1 lb ground chicken
- 1/2 cup grated Parmesan
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup chopped parsley
- Salt and pepper to taste
- 1 cup marinara sauce
- Extra Parmesan for topping
Instructions
- Preheat your oven to 375 degrees F.
- In a bowl, combine ground chicken, Parmesan, garlic, breadcrumbs, egg, parsley, salt, and pepper.
- Form the mixture into mini meatloaves and place on a greased baking sheet.
- Top each meatloaf with marinara sauce and extra Parmesan.
- Bake for 25-30 minutes or until chicken is cooked through.
Notes
- Ground turkey can be substituted for ground chicken.
- For a spicier version, add some chili flakes to the mixture.
