Ingredients
4 boneless, skinless chicken breasts
4 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups broccoli florets
2 cups fresh spinach
1/2 cup chicken broth
2 tablespoons soy sauce
1 tablespoon cornstarch
1/4 cup water
Instructions
In a bowl, combine minced garlic, olive oil, paprika, salt, and black pepper. Rub this mixture over the chicken breasts.
Heat a skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until fully cooked. Remove the chicken from the skillet and set aside.
In the same skillet, add broccoli florets and sauté for 3-4 minutes. Add fresh spinach and cook until wilted.
In a small bowl, whisk together chicken broth, soy sauce, cornstarch, and water. Pour this mixture into the skillet with the vegetables. Stir and cook until the sauce thickens.
Return the cooked chicken breasts to the skillet. Coat them with the sauce and vegetables. Cook for an additional 2-3 minutes.
Serve the garlic chicken with broccoli and spinach hot.
