Delightful Fresh Raspberry Tiramisu with a fruity twist
Ingredients

- 1 cup fresh raspberries
- 1/4 cup sugar
- 1 cup heavy cream
- 8 oz mascarpone cheese
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 24 ladyfinger cookies
- 1/2 cup brewed coffee, cooled
- Cocoa powder for dusting
Instructions
- In a bowl, mix fresh raspberries and sugar. Let sit for 10 minutes.
- In another bowl, whip heavy cream until stiff peaks form.
- Blend mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- Gently fold whipped cream into the mascarpone mixture.
- Dip each ladyfinger into coffee and layer them in a dish.
- Add a layer of the mascarpone mixture and top with raspberry mix.
- Repeat layers and refrigerate for at least 4 hours.
- Before serving, dust the top with cocoa powder.
Notes
- For a quicker version, use store-bought raspberry jam.
- Adjust sugar based on the sweetness of raspberries.
