  • 2 large eggs
  • 1 cup diced fresh peaches
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, mix together the flour, baking powder, salt, sugar, and cinnamon.
  2. In another bowl, whisk together the milk and eggs until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Gently fold in the diced peaches.
  5. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
  6. Drop spoonfuls of the batter into the hot oil, frying in batches until golden brown on both sides, about 3-4 minutes.
  7. Remove fritters from oil and drain on paper towels.
  8. Dust with powdered sugar before serving.
